Food Production and Service provides students with hands-on experience in the kitchen. The course gives students the opportunity to learn and apply the basic principles of food safety, sanitation, and safe working environments. The student will gain knowledge of principles of food preparation through classroom instruction and laboratory experience. The class will emphasize reading recipes, nutrition, culinary math, knife skills, proper measurements, identification of tools and equipment, terms and concepts.
